Castillo de Piñar ‘Sofrito’ … Traditional Spanish Flavor
Our first step is to pan-cook, on low heat, fresh (no reclamations or by-products are used) pieces from whole garlic and onions in our Extra Virgin Olive Oil with herbs & spices. Next we add naturally grown red pear tomato puree. Then our cooks allow the natural marriage of tomato acid with the sweet & pungent flavors of onion & garlic to produce a mellow, yet flavor-rich sauce.
Castillo de Piñar ‘Fritada’ … Spanish Heritage with a Mild Kick
We begin with our ‘Sofrito’ as the foundation then add fresh pieces of whole mild green & red peppers to the pan and cook them with the garlic, onions, herbs, spices and our Extra Virgin Olive Oil. Next we add naturally grown red pear tomato puree. As with our ‘Sofrito’, we allow the natural marriage of tomato acid with the sweet & pungent flavors of onion, garlic & mild peppers to produce a traditional Spanish flavor-rich sauce with a mild kick.
